Tasting Note
Delicately coloured, perfumed with roses, red currant and under‑ripe strawberry; vibrant, dry and textured palate with bright acidity and medium body.

Food Pairing
Grilled prawns, seared tuna, Niçoise salad, charcuterie, roast chicken, Vietnamese spring rolls, sushi/sashimi, spicy Thai or Korean dishes.

Production Method
A few hours skin contact, gently pressed; fermented to dryness without added yeast in old French barrels and matured ~5 months on lees.
