Tasting Note
Perfumed red and black cherry, wild strawberry, dried rose, forest floor and spice. Silky yet structured tannins, bright acid, earthy/amaro lift and subtle baking‑spice oak; medium‑full body with a very long, layered finish.
Food Pairing
Western: roast duck breast, lamb rack, mushroom risotto, beef ragu. Asian: Peking duck, char siu, miso‑glazed fish, shiitake soy braises and rich noodle dishes.
Production Method
Hand‑harvested; mostly destemmed with ~5% whole clusters. Native ferment in small open vats, gentle extraction, 15–17 months in French oak (≈50% new). Minimal SO2, light filtration; sustainably farmed/vegan practices.

Block 8 (0.75 ha) planted 2016 on quartz‑riddled volcanic soils; high‑density plantings (~11,300 vines/ha; a 'crazy' section at 22,600 vines/ha) with seven clones. Bindi (Dhillon family) makes small‑lot, ageworthy Pinot Noir in Macedon Ranges.
