Tasting Note

Earthy, spicy Pinot with redcurrant and black-cherry fruit, sous-bois and clove notes; silky, fine-grained texture, medium body, firm tannins and a long, savory finish.


Food Pairing

Western: roast duck, mushroom risotto, grilled lamb rack, seared salmon with beurre rouge. Asian: Peking duck, miso-glazed black cod, char siu pork, mushroom soba, yakiniku (grilled beef).


Production Method

Hand-harvested, fermented with minimal intervention; matured 15–17 months in French oak (approx. 35% new); organic/sustainable vineyard practices.

Bindi is the Dhillon family estate in the Macedon Ranges. Block 5 (planted 1992) is a small, quartz-riddled single vineyard managed for low yields and careful bottle-ageing.
