Tasting Note
Fine, persistent mousse with bright citrus, tart green apple and red-apple notes, nougat and brioche complexity, baking spices and saline minerality; concentrated yet elegant, with a long, refreshing finish.

Oysters, lobster, white fish (sole), roasted chicken, foie gras; Asian: sushi, sashimi, tempura, dim sum, light Thai or Vietnamese seafood dishes.

Production Method
Multi-vintage prestige blend (NV) using reserve wines from 2000, 2003, 2008 and 2012; 50% vinified in oak, traditional method (méthode champenoise); extra-brut dosage ~4.5 g/L; released exclusively in magnum.
