Tasting Note
Tight, mineral-driven Ansonica with dried pear, apple, lemon peel, saline granite minerality, toasted spice and light smoky oak. Full-bodied, bright acidity and phenolic texture with a long, steely finish.

Production Method
Hand-harvested Ansonica; very soft pressing with dry-ice, <1 hour skin contact, 48h cold settling, alcoholic fermentation in new 225L French barriques at ~20°C; 12 months lees aging; no malolactic fermentation.
