Tasting Note

Rich, saline Ansonica with orange blossom, dried citrus, ripe pear, honeyed nectarine, fine spice and sea-spray minerality; oily texture and a long, saline finish.


Food Pairing

Western: grilled sea bass, spaghetti alle vongole, seared scallops, lobster, roasted chicken with lemon. Asian: sushi/sashimi, tempura, miso-glazed cod, steamed fish with ginger and scallions, Thai-style fish curries.


Production Method

Hand-harvested old-vine Ansonica; short skin maceration (5–6 hrs), indigenous-yeast fermentation; aged 7–8 months on fine lees in seasoned barriques and stainless steel; minimal filtration.


Vineyard Info

Sourced from the Pietrabona single vineyard on Isola del Giglio; 80–100 year-old bush vines planted in granitic, sandy soils. Small-production single-vineyard bottling by Bibi Graetz.
