Tasting Note

Concentrated cherries and red berries with rose, crushed herbs, iron/mineral notes; firm acidity, silky yet powerful tannins, spice and floral depth, long savory finish.

Western: bistecca alla Fiorentina, roast lamb, aged pecorino/parmesan, mushroom risotto, tomato-based pasta. Asian: Peking duck, char siu, Korean barbecue (bulgogi), Sichuan-spiced beef or char-grilled yakitori.


Production Method

Hand-harvested from old vines; natural fermentation (indigenous yeasts) in open-top barrels/tanks with frequent manual punchdowns; malolactic in oak; aged ~18–20 months in barriques/50hl casks.

Bibi Graetz, an artist-turned-winemaker based near Florence (Castello di Vincigliata), works old-vine Sangiovese in Lamole and nearby sites; Colore is his flagship small-production bottling.
