Tasting Note
Concentrated black and blue fruits—cassis and blackberry—violet and graphite notes with bay leaf, eucalyptus, tobacco and baking spice; mineral salinity, silky texture, firm fine-grained tannins and a long, savory finish.

Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar. Asian: Korean BBQ (bulgogi), Cantonese roast duck/char siu, miso-glazed black cod, spicy Szechuan beef.

Production Method
Small-lot fermentations (stainless, concrete and select whole-berry lots), blended from Columbia Valley parcels; aged approximately 16–19 months in French oak (portion new), gentle extraction and minimal intervention.
