Tasting Note
Brooding dark-berry and blueberry compote with smoked meat, lavender, black pepper and violet notes; silky texture, medium–full body, fine-grained tannins and a savory, saline finish.
Food Pairing
Western: grilled lamb, roast beef, venison, braised short ribs, wild mushrooms. Asian: Korean BBQ, char siu, miso-glazed aubergine, Sichuan pepper beef, teriyaki beef or pork.
Production Method
Fermented with roughly 66–100% whole clusters; aged about 11 months in French oak (≈40% new); Rhône-style vinification with minimal intervention.
