Tasting Note
Blackberry and marionberry with lavender, smoked meat, white and black pepper, violets, cacao and espresso. Medium–full-bodied, silky texture, polished dusty tannins, bright mineral core and a long tobacco-tinged finish.
Food Pairing
Western: grilled lamb chops, roast beef, braised short ribs, duck confit. Asian: Korean BBQ (galbi/bulgogi), Sichuan-style beef, char siu pork, lamb kebabs with cumin.
Production Method
Hand-harvested Syrah; predominantly whole-cluster fermentation (~70–80%), aged 12–14 months in French oak (≈20% new), minimal intervention winemaking.
