Tasting Note
Fresh blackberries, plum and boysenberry with violet, dried lavender, cracked pepper, smoked meat, olive and stony minerality; dark chocolate and saline notes lead to a long, savory finish.
Food Pairing
Western: grilled ribeye, lamb chops, charcuterie, roasted mushrooms and aged cheeses. Asian: Korean BBQ (bulgogi), Chinese char siu, Sichuan-style beef, miso-glazed eggplant, teriyaki or soy-braised short ribs.
Production Method
100% Syrah from Boushey Vineyard; grapes primarily destemmed, ~40% fermented in large concrete and the balance in stainless/French oak; aged in French oak barrels for nearly a year.
