Tasting Note
Dense black and blue fruit (blackberry, black raspberry, blueberry) with black olive, white/black pepper, lavender, smoked meat and stony mineral notes; ripe, savory and layered with firm, polished tannins and a long savory finish.

Western: grilled lamb chops, roast beef, braised short ribs, charcuterie and aged cheeses. Asian: Korean BBQ (bulgogi), Chinese-style char siu, spicy Sichuan beef, teriyaki or hoisin-glazed dishes.
Production Method
Fermented with a significant portion of whole clusters (≈45% in 2016); matured ~12 months in French oak (about 50% new).
