Tasting Note
Inky dark fruit of blackberry and black raspberry, purple florals, cracked pepper, olive and smoked meat notes. Medium‑to‑full body with firm, fine‑grained tannins and a mineral, slightly chalky finish.

Food Pairing
Western: grilled lamb chops, braised short ribs, peppered steak, aged cheddar. Asian: Korean BBQ (bulgogi), Sichuan pepper beef, hoisin‑glazed pork, char siu duck.

Production Method
Fermented with significant whole clusters (≈45% reported for 2016) and aged ~12 months in French oak (about 50% new).
