Tasting Note

Merlot-dominant, concentrated black cherry and plum with dark chocolate, anise, tobacco and savory leather. Velvety mid-palate, polished tannins and a long, spicy finish.


Food Pairing

Western: grilled ribeye, roast lamb, mushroom risotto, aged cheddar, beef short ribs. Asian: Peking duck, Korean BBQ (galbi), char siu, braised beef with soy, milder mapo tofu, teriyaki beef.


Production Method

Partially fermented (small portion in concrete), blended, aged ~19 months in French oak (approx. 60% new), bottled after extended oak maturation.
