Tasting Note
Concentrated black cherry, plum and blackberry with violet, licorice and subtle cocoa. Mineral, saline underpinning; medium–full body, chiselled polished tannins, bright freshness and a long, elegant finish.

Food Pairing
Roast beef, lamb, venison, mushroom risotto, aged cheeses; Peking duck, char siu, beef bulgogi, Korean barbecue, grilled miso aubergine.

Production Method
Traditional fermentation of Merlot and Cabernet Franc; aged ~16 months in French oak barrels (c.50% new).
