Tasting Note
Focused, pure Saint-Émilion: black cherry, plum and raspberry with violet, licorice and saline limestone minerality; medium‑full, polished/grippy tannins, fresh acidity and a long, fragrant finish.
Food Pairing
Western: roast lamb, braised beef short ribs, duck confit, mushroom risotto. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ (galbi), soy-braised beef or Korean braised short ribs (galbi jjim).
Production Method
Hand-harvested, fermented in vats, matured ~16 months in French oak barrels (≈50% new). Estate has moved toward organic viticulture practices.
