Tasting Note
Ripe black cherry and plum with violets, cocoa, tobacco and forest-floor earth. Polished, powdery tannins, lively acidity and mineral drive; long, savory finish.

Food Pairing
Roast lamb, beef short ribs, duck confit, aged hard cheeses; Asian: Peking duck, char siu, Korean BBQ (bulgogi), mushroom or beef hot pot.

Production Method
Hand-harvested, sorted, fermented in concrete/stainless vats with long maceration; aged ~16 months in ~45% new French oak; light filtration, minimal fining.

One of Saint-Émilion’s oldest estates, ~9.5–10 ha on the limestone plateau. Owned by the Wertheimer/Chanel group since 2017; managed by the Canon team under Nicolas Audebert. Grand Cru Classé.
