Plush and round with fleshy red and dark-blue fruits, dark cherry, dark chocolate, toffee, dark plum, black currant and mocha; fine tannins and very approachable in youth.
Food Pairing
Grilled ribeye or roast lamb, mushroom risotto, aged Gouda; Asian: char siu / hoisin-glazed pork, Korean BBQ beef, teriyaki steak, Peking-style duck.
Production Method
Small-lot fermentations with careful maceration, malolactic conversion, and oak aging in French/American barrels to integrate tannins and add toast and mocha notes.
