Tasting Note

Bright red and black fruits (cherry, plum, cassis) with lavender, dark chocolate, chaparral sage, graphite, black tea and tobacco; vanilla and baking spice from oak; fresh acidity, firm fine-grained tannins, balanced, mouthwatering finish.

Western: grilled ribeye, lamb chops, braised short ribs, mushroom risotto, aged cheddar. Asian: Korean bulgogi, Chinese char siu or red-braised beef, Sichuan-style lamb, teriyaki beef.


Production Method

Extended maceration; individual-lot vinification; aged 14 months in French oak (30% new); malolactic fermentation for texture.
