Tasting Note

Bright red-fruit core of wild raspberry, strawberry and cherry with subtle spice and floral lift. Slim, elegant palate with creamy entry, fine tannins and lively acidity; fresh, precise finish.


Food Pairing

Western: roast chicken, coq au vin, mushroom risotto, lamb, soft/hard cheeses. Asian: miso-glazed fish, teriyaki salmon, char siu pork, Korean BBQ, mushroom soba.


Production Method

Hand-harvested, short maceration and stainless-steel fermentation; matured ~16–18 months in a mix of used oak barrels, glass 'wineglobes' and stainless tanks; bottled unfined and unfiltered.

Small family domaine run by Benoît Ente (≈6 ha), practising sustainable/low-intervention viticulture. Mathilde is a rare cuvée from Les Champans and Les Femelottes parcels, named for his daughter.
