Tasting Note
Crisp, citrus-driven Aligoté: green apple, lemon, white flowers, stony minerality and saline energy. Bright acidity, lean texture and a long, zesty finish.
Food Pairing
Western: oysters, shellfish, ceviche, grilled or roasted white fish, goat cheeses, roasted poultry. Asian: sashimi/sushi, tempura, Vietnamese/Thai seafood salads, light soy-marinated fish.
Production Method
Hand-harvested Aligoté; gentle pressing, fermentations and élevage in large wood and glass vessels (wineglobes) with ~18 months maturation, then rested in stainless steel; bottled with minimal filtration.
Vineyard Info
Small Puligny–Chassagne domaine; fruit from three parcels (two planted 1949/1953, one 2002). Domaine farms ~6 ha and vinifies parcels separately with careful, low-yield work.
