Tasting Note
Perfumed dark berry and blackcurrant with violet, cocoa and chalky mineral; medium‑full, silky texture, fresh acidity, refined chalky tannins and a long, saline finish.

Food Pairing
Western: roast lamb, beef tournedos, duck à l'orange, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ beef, beef rendang, mushroom stir-fries with soy/hoisin.

Production Method
Hand-harvested and sorted; fermentation in concrete vats with controlled maceration (minimal added SO2); aged ~18 months in French oak (≈30% new), egg-shaped tuns and older barrels.

Saint-Émilion Grand Cru Classé estate (c.13–20 ha). Modernised in the 1990s; owned by Vignobles K (Peter Kwok) in recent years; Merlot-led plantings and contemporary cellar techniques.
