Tasting Note
Concentrated red and black cherry, wild berries, violets and rose petal with baking spice, forest-floor and chalky minerality. Silky, polished tannins, bright acidity and a long, savory finish with subtle oak and chocolate notes.
Food Pairing
Western: roast lamb, braised beef, duck à l'orange, aged cheeses. Asian: Peking duck, char siu/pork belly, shiitake mushroom hot pot, Korean BBQ (galbi).
Production Method
Hand-harvested, low yields (~33–35 hl/ha). Fermented in tank/wood; aged ~16 months in 55% new oak, 25% amphora and 20% used barrels; careful élevage for balance.
