Tasting Note
Pale golden with fine bubbles. Fresh nose of candied citrus, apple and peach; palate reveals jammy stone fruit, toasted brioche, honey and subtle coffee notes, finishing long, elegant and slightly saline.
Food Pairing
Western: roast veal, chicken de Bresse, chanterelle dishes, lobster, oysters, creamy cheeses. Asian: sushi/sashimi, tempura, dim sum, steamed fish, light Thai prawn curry.
Production Method
Méthode traditionnelle (bottle fermentation). Made from the 'Cœur de Cuvée' press fraction; vintage blend, long lees ageing and disgorged with approximately 8 g/L dosage.
