Tasting Note

Fine persistent bubbles, pale golden color. Aromas of yellow stone fruit, candied citrus, brioche, white flowers and light spice. Dry, tense palate with lively acidity, subtle minerality and a long toasted, slightly salty finish.


Food Pairing

Oysters and raw shellfish; seared scallops or sole with citrus (Western). Sushi/sashimi, tempura, dim sum or lightly spiced Thai/Chinese seafood dishes (Asian). Also pairs well with soft cheeses (Brie, Camembert).


Production Method

Méthode Champenoise (bottle fermentation). 100% Pinot Meunier, vinified as Brut Nature (zero dosage) and aged on the lees ~5 years to develop autolytic notes.
