Tasting Note
Luminous golden colour with fine bubbles. Nose of white flowers, grapefruit, bergamot, candied pineapple, marzipan and brioche. Crisp, citrus-driven palate with mineral spine, toasted brioche and a long, clean finish.

Western: oysters, scallops, prawns, sole with citrus, grilled white fish, aged Parmesan, light poultry in cream sauce. Asian: tempura, sushi/chirashi (salmon), sashimi, citrus yuzu seafood, light miso-glazed fish.
Production Method
Blanc de blancs (100% Chardonnay) made from 'cœur de cuvée' first press; traditional méthode champenoise with extended lees ageing (≥5 years) and Brut dosage (≈8 g/L for the 2016 release).
