Crisp, floral Riesling with lime, musk and jasmine, wet-stone minerality, zesty lemon-lime citrus and intense pinpoint acidity. Light-to-medium body, concentrated core and long, driven finish with a hint of residual sweetness.
Food Pairing
Grilled crayfish or prawns, oysters, sashimi/sushi, Thai or Vietnamese spicy seafood dishes, ceviche, steamed fish with lime and coriander, goat cheese salads, lemon-herb chicken, light pasta dishes.
Production Method
Fruit sourced from multiple Tasmanian valleys; hand-harvested, cool stainless-steel fermentation (some parcels with native yeasts), rested on fine lees, minimal oak, finished under screwcap.
Vineyard Info
Bay of Fires (originated under Hardys, now part of Accolade Wines) sources small parcels across Tasmania's cool-climate vineyards to produce refined, terroir-driven Riesling and other varieties.
