Tasting Note
Pale straw with pear and gentle spice aromas. Lively palate of melon, peach and Bosc pear, smooth supple mouthfeel and a clean, juicy finish.
Food Pairing
Western: grilled prawns, seared scallops, roast chicken, pork belly, creamy pasta. Asian: sushi/sashimi, miso-glazed salmon, Thai green curry, spicy stir-fry (pad kee mao).
Production Method
Fruit sourced from Tamar, Derwent and Coal River Valleys. Certain parcels undergo wild-yeast fermentation, others controlled stainless-steel ferments; partial old‑oak maturation and lees contact for texture, then blended and bottled under screwcap.
Vineyard Info
Bay of Fires, founded in 2001 in northern Tasmania, makes cool‑climate wines from selected Tasmanian vineyards, focusing on small-batch, hand-harvested fruit and careful oak/fermentation choices.
