Tasting Note

Dark ruby with blackcurrant, plum, cedar, tobacco, truffle and vanilla from oak; medium–full, firm tannins and long savory finish.

Western: roast lamb, côte de boeuf/prime rib, beef stew, mushroom risotto. Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ (galbi/bulgogi), braised beef with soy/ginger.


Production Method

Hand-harvested; brief cold soak, fermentation in stainless-steel vats, malolactic conversion and barrel ageing ~16–18 months in French oak (≈50% new).
