Tasting Note
Concentrated, mid-gold Chardonnay with lemon zest, white peach, nectarine, hazelnut and nougat alongside leesy brioche, flint and integrated oak; bright chalky acidity and a long, savory finish.
Food Pairing
Western: roast chicken, seared scallops, creamy pasta, pork belly, soft cheeses (brie, camembert). Asian: miso-glazed cod, teriyaki salmon, sushi (fatty tuna), Chinese-style roasted pork, Thai coconut-curry seafood.
Production Method
Hand-harvested Chardonnay fermented in tight-grain oak barrels; malo-lactic in barrel, ~14 months oak ageing (c.59% new in some vintages), minimal SO2, gravity decanted off lees and coarsely filtered before bottling.
