Tasting Note
A complex, full-bodied Chardonnay: stone fruit, white peach, nectarine, pineapple, honeycomb and honeysuckle aromas; creamy, lees-driven palate with bright, chalky acidity and a saline seashell finish. Long, persistent finish.
Food Pairing
Grilled lobster or scallops with beurre blanc; roast chicken or pork with herb jus; mushroom risotto; aged comté or triple cream cheeses. Asian: miso-glazed black cod, soy-ginger seared scallops, chicken katsu, rich ramen or coconut-based Thai curries.
Production Method
Hand-harvested estate fruit; fermented in a mix of stainless steel and oak with full malolactic conversion. Aged 12–14 months in predominately new oak (≈60–70%), barrels topped and periodically stirred, coarsely filtered to bottle.
Vineyard Info
Bass Phillip is an iconic small Gippsland estate founded by Phillip Jones (first plantings 1979). Small holdings (~10 ha total) with original 1979 vines; organic since 1993 and biodynamic practices since 2002. Wines are low-yield, terroir-driven and highly allocated.
