Tasting Note
Perfumed red cherry, raspberry and rose petal with forest‑floor and orange‑peel notes. Toasty vanilla/chocolate and subtle Campari/whole‑bunch spice; lush mid‑palate, powdery tannins, bright acidity and a long spice‑tinged finish.
Food Pairing
Roast duck, mushroom risotto, lamb or roast pork; grilled salmon, miso‑glazed black cod, Peking duck, char siu, sautéed shiitake with soy and mirin.
Production Method
Wild‑yeast ferments in open stainless tanks with regular plunging; gravity transfer to French Allier oak (c.22% new) for ~14 months; natural MLF, no fining and bottled unfiltered.

Established by Phillip Jones in 1979; low‑cropping, high‑density vines, organic practices since 1993 and biodynamic from 2002. Acquired by Jean‑Marie Fourrier’s syndicate in 2020.
