Tasting Note
Lemony apple-tart and white flowers with almond/cashew and ripe peach. Rich, mouthfilling texture with nougat/toffee notes, striking minerality and high, driving acidity, finishing long and savory.

Western: roast chicken, lobster with beurre blanc, mushroom risotto, creamy pasta. Asian: miso‑glazed black cod, tempura prawns, teriyaki salmon, light coconut‑based Thai dishes.
Production Method
Organic (since 1993) and biodynamic (since 2002) viticulture; low-intervention winemaking, barrel-fermented and matured in French oak (≈20% new), lees contact for texture.
