Tasting Note
Bright red and dark cherry, raspberry and blood-plum fruit with savory rosemary-salt, warm baking spice and sarsaparilla. Sumptuous mid-palate, finely polished tannins and a lingering, savory-fruited finish.
Food Pairing
Western: roast duck, pork loin, mushroom risotto, grilled salmon. Asian: char siu pork, miso-glazed salmon, teriyaki chicken, shiitake ramen, Korean BBQ (bulgogi).
Production Method
100% estate-grown; organic/biodynamic viticulture. Traditional open-top/controlled fermentations with gentle extraction, minimal intervention and maturation in French oak (limited new oak). Bottled with modest cellar ageing.
Vineyard Info
Established by Phillip Jones in 1979 in South Gippsland. Vineyards organic since 1993 and biodynamic since 2002. Jean‑Marie Fourrier assumed winemaking leadership after 2020; estate focused on site expression and low-yielding, high-density plantings.
