Tasting Note
Golden, textural Verdejo—apple, quince, lemon zest, fennel and dried herb notes with subtle spicy oak and saline minerality. Rich, savory mid-to-full palate with a slightly bitter, long finish.

Western: grilled white fish, bouillabaisse, roasted chicken, seafood risotto. Asian: ceviche, sushi/sashimi, Vietnamese spring rolls, lightly spiced Thai or Chinese steamed fish.

Production Method
Hand-harvested old bush vines; fermentation with indigenous yeasts in a mix of oak barrels, foudres, concrete and stainless steel; 6–9 months ageing.
