Tasting Note
Fresh, citrus-driven Verdejo with green apple, white peach, herbaceous bay-leaf notes and light minerality. Bone-dry, mid-weight, crisp acidity and a clean, slightly saline finish.

Food Pairing
Western: grilled fish, shellfish, bouillabaisse, roasted chicken, goat cheese. Asian: ceviche/crudo, sushi and sashimi, Thai green papaya salad, grilled fish with yuzu or ponzu.

Production Method
Hand and machine-harvested; must cooled and fermented in stainless steel; aged briefly in stainless; unoaked; bottled under screwcap with minimal intervention to preserve fresh varietal character.
