Tasting Note

Delicate red fruits (strawberry, cranberry, sour cherry) with rose-petal florals, wet-stone minerality, subtle spice and silky texture; fresh acidity, fine chalky tannins and a medium-length, elegant finish.


Food Pairing

Western: roast duck, coq au vin, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu (barbecued pork), shiitake mushroom stir-fry, mildly spiced Thai red-curry with pork.


Production Method

Fully destemmed, short cold soak, native yeast fermentation; aged ~12–18 months in small oak barrels with roughly ≤30% new oak; minimal intervention, bottled with little/no fining or filtration.
