Tasting Note

Perfumed red cherry and raspberry with rose petal, sous‑bois and gentle spice. Elegant, silky mid‑palate, fine-grained tannins and a poised, mineral-tinged finish with moderate length.

Western: roast duck, mushroom risotto, coq au vin, duck breast with cherry sauce, roasted chicken. Asian: Peking duck, miso‑glazed black cod, char siu pork, mushroom hot pot, soy‑ginger glazed salmon.


Production Method

Organically farmed; hand-harvested Pinot Noir, partial whole‑cluster fermentation in open-top vats, native yeasts, élevage 14–18 months in French oak (approx. 20–30% new).
