Tasting Note

Perfumed Chambolle style: red cherry, raspberry and strawberry with floral violet notes, sous‑bois, mushroom and light game. Silky texture, fine acidity and a mineral, gently savory finish (medium length).

Western: roast duck, mushroom risotto, coq au vin, pork tenderloin, aged Gruyère; Asian: Peking duck, miso‑glazed salmon, mushroom‑based Japanese dishes (dobu jiru, kinoko don), char siu with lighter sauces.


Production Method

Grapes are usually fully destemmed with a short cold soak, fermented with indigenous yeasts and aged ~16–18 months in small oak barrels (≤30% new). Minimal intervention; often bottled without fining or filtration.
