Tasting Note

Perfumed red cherry and raspberry with violet florals, baking spice, forest-floor and chalky minerality; fine-grained tannins, bright acidity and an elegant, persistent finish.


Food Pairing

Western: roast duck, mushroom risotto, roast lamb, pork tenderloin, coq au vin. Asian: Peking duck, miso-glazed black cod, char siu pork, shiitake-gyoza, soy-braised pork belly.


Production Method

Hand-harvested Pinot Noir; partial destemming; native-yeast fermentation; aged ~18–20 months in small French oak barrels (c.20–30% new); minimal intervention, bottled with little or no fining/filtration.
