Tasting Note
Perfumed red and black cherry, violets, bay leaf and clove, with saline minerality, savory undergrowth and fine dusty tannins. Medium-bodied, sappy core, bright acidity and a long spiced finish.

Food Pairing
Roast duck with cherry sauce, beef bourguignon, mushroom risotto, roasted pork loin, Époisses or Saint-Nectaire; Asian: duck tataki, miso-glazed black cod, mushroom soba, char siu pork.

Production Method
Hand-harvested Pinot Noir; full destemming and fermentation in wooden vats; aged 16–18 months in oak (≈25% new); bottled without fining or filtration. Sustainable/organic practices.
