Tasting Note

Perfumed red fruits (cherry, raspberry), floral violet topnotes, earthy/mushroom and subtle barnyard hints; silky texture, bright acidity and saline mineral edge, medium length.

Western: roast duck, mushroom risotto, coq au vin, roast chicken, pork tenderloin, soft cheeses (Comté). Asian: Peking/roast duck, char siu pork, miso‑glazed fish, mushroom‑based Japanese dishes, teriyaki chicken.

Organic viticulture; hand-harvested; partially destemmed; fermentation with indigenous yeasts; aged ~18–20 months in French oak (≤30% new); minimal intervention.
