Tasting Note

Perfumed red fruits of cherry and raspberry, rose petal and spice, with chalky minerality, fine tannins and bright acidity; medium-plus body and a long, precise finish.

Western: roast duck, roast chicken, grilled/poached salmon, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu, teriyaki salmon, soy‑glazed mushrooms, mushroom hot pot (nabe).


Production Method

Hand-harvested fruit from Les Bons Bâtons; fully destemmed, short cold soak, indigenous yeast fermentation; aged ~12–18 months in small oak barrels (≈10–30% new); minimal intervention, little/no filtration.
