Tasting Note
Concentrated dark-berry and plum fruit with raspberry and blueberry, layered with dark chocolate, spice and smoke. Firm yet velvety tannins and bright acidity provide balance; long, refined finish with licorice and toasted oak. Drink now or cellar further.
Food Pairing
Western: Stilton or other blue cheeses, dark chocolate, walnut tart, roasted lamb or braised beef. Asian: Chinese red-braised pork (hong shao rou), Peking duck, five-spice roasted duck, rich mooncakes or sesame desserts.
Production Method
Grapes fermented in lagares or stainless tanks; fermentation is stopped by addition of neutral grape spirit (aguardente) to fortify. Aged 18–24 months in large oak vats then bottled (often unfiltered) to mature in bottle.
