Tasting Note
Intense dried black-plum and date aromas with violet and red-licorice notes. Full-bodied, concentrated black fruit, silky texture and opulent sweetness balanced by fresh acidity; long, elegant, spicy finish.
Food Pairing
Western: blue cheese (Stilton), dark chocolate desserts, walnut tart, roasted game or duck. Asian: red-braised pork (hong shao rou), miso-glazed duck, sesame or nut-based desserts, mooncakes.
Production Method
Traditional vintage Port: grapes destemmed/crushed, macerated, fermentation arrested by addition of grape spirit (aguardente), matured in used oak and stainless vats for ~2–3 years before bottling.
