Tasting Note
Amber-tawny color; aromas of dried figs, raisins, toasted walnut, caramel, vanilla and subtle coffee. Soft, silky palate with baked orange, toffee and nutty notes, medium‑sweet, balanced acidity and a long warm finish.
Food Pairing
Western: blue and aged cheeses (Stilton), crème brûlée, almond tart, roasted nuts, dark chocolate. Asian: Chinese mooncakes, egg custard tarts (dan tat), sesame sweets, sticky rice desserts, hoisin/miso glazed pork or Peking duck.
Production Method
Grapes fermented (often in lagares), fortified with grape spirit to stop fermentation, then matured in oak casks; the blend is aged an average of 10 years in wood before bottling.
