Tasting Note
Brambly red fruits, cherry and plum with cedar, pencil-shaving and floral (lilac) notes. Silky texture, fresh acidity and fine, coated tannins; medium-bodied with a persistent, slightly toasty finish.
Food Pairing
Roast lamb, grilled steak, duck confit, aged cheeses; Asian: Peking duck, char siu, braised beef with soy/miso, mushroom hotpot, richer Korean BBQ (bulgogi).
Production Method
Fermented in stainless steel and concrete vats with ~20-day maceration; matured ~12 months in French oak barrels (20–30% new). Selection for second label.
