Tasting Note
Honeyed vanilla and toasted oak with orchard fruits (pear, apple), candied orange, grapefruit zest, ginger and light floral (geranium); silky mouthfeel with a refreshing citrus-tinged finish.
Food Pairing
Western: crème brûlée, blue cheese, roasted pork, grilled lamb, aged cheddar. Asian: miso-glazed salmon, Peking duck, char siu, Korean BBQ, braised pork belly.
Production Method
Matured 16 years primarily in American oak (ex-bourbon) casks, then finished for several months in French oak Pineau des Charentes casks; bottled at 47.6% ABV.
