Tasting Note
Creamy toffee, vanilla, honey and brown sugar with tropical fruit and gentle spice from Caribbean rum casks; rounded, sweet palate and soft, lingering finish.
Food Pairing
Western: dark chocolate, crème brûlée, sticky toffee pudding, roasted pork, mature cheddar. Asian: char siu (BBQ pork), miso-glazed eggplant, Korean bulgogi, spiced nuts and satay.
Production Method
Matured for 14 years in traditional oak casks then finished in American oak casks previously used for West Indian rums; typically chill-filtered and lightly coloured before bottling.
