Tasting Note

Fresh red cherry and pomegranate with wildflowers, dried herbs, cedar and a savory, earthy undercurrent. Silky texture, bright acidity, dusty stem tannins and a gently persistent finish.

Roasted or confit duck, mushroom risotto, grilled salmon/seafood, herb-roasted pork, miso-glazed eggplant, teriyaki chicken, char siu pork bao, grilled vegetables.


Production Method

Hand-harvested; fermented with ~15% whole clusters on indigenous yeasts; gentle extraction; aged 8–14 months in French oak (minor percentage new).

From Viñedo Los Suizos (planted by Francisco Baettig near Traiguén); dry-farmed on volcanic, clay-loam soils at cool, southern latitude. Project founded by Francisco Baettig and Carlos de Carlo to highlight Traiguén terroir.
